How are ‘records’ defined in Contentful? If I have an entry with 5 text fields and 2 assets, how many records is it in total?

Sure. So a record is either an entry (a database-like entry, one object of structured content) or an asset (in other words, a file). Essentially, it’s just one piece of content.
In your example (1 entry + 2 assets) you would have 3 records.
