Not sure if that is a bug or feature (maybe to prevent a path change in a published page), but when I configure a slug field it works (slug is generated when I insert/change the title) but when I publish the entry the slug doesn’t update anymore. If I unpublish it works again.

Yes, it seems by design, and probably to avoid existing paths to change and impact SEO. Unpublishing and doing the changes seems also acceptable, anyway, and since I need more flexibility on the way the slugs are generated I ended up with my own slug generator - https://github.com/pauloamgomes/contentful-better-slugs
